Well golly gee... I left my pearl necklace and apron at the office, AGAIN!
It's six thirty, you just pull into the driveway after a crappy day at the office. Your a single gal, but let's face it. That box of wine and 100 calorie packet of popcorn isn't going to cut it for dinner tonight. You want substance. A full meal and a real glass of wine to push your pushy boss into the past.
Well honey, as far as the wine goes your on your own tonight. The box will have to do. But, WAIT!!!!!! I am looking in your fridge and what is this I see? A yellow squash? And in your freezer.... yes I see it!!! There is a frozen chicken breast? PULL THOSE SUCKERS OUT! And hello brown rice sitting on the shelf in the pantry. Haven't we been promising ourselfs we would start to eat more brown rice? Tonight is the night to eat a low cal dinner so we can have a few extra glasses of that wine (boss??? you means da bosss ilubs??).
Whomever said a recipe was the key to the gateway to culinary bliss never had a meal from a recipe rebel as myself. First things first, start your brown rice (I'm not a rice racist either, white works too) defrost that chicken in the microwave. Slice it up, and put it in hot pan with a bit of oil and if you have some onion in the mix add that too. Then throw in that squash you found. Add a bit of garlic (fresh is always awesome, but powder or salt is fine too), for some spice throw some red pepper flakes left over from pizza night. Or for a different taste I add a little bit of salad dressing over my chicken. Voila! Dinner in 15 mins flat.
This easy approach can be done with a number of items in your pantry or freezer. Having a grain, a protein and a veggie. It's that simple. Oh and silly me, I forgot the most important ingredient.... THE WINE!!!!!!
